Lamination Masterclass: The Science of 81 Layers
A proper French-style croissant has exactly 81 layers. Three single turns and three book turns give you 3 × 3 × 3 × 3 × 3 × 3, or 729 sheets of dough if you went all the way, which most bakers do not. Most pull up at 81 because beyond that, the layers fuse and the magic stops.

What lamination actually is
Lamination is the process of folding a sheet of fat (the beurrage) inside a sheet of dough (the détrempe) and rolling them out together repeatedly, creating alternating layers. When the laminated dough hits the oven, the water in the butter turns to steam, and the steam pushes the dough layers apart. The fat melts into the gluten. What was 81 layers becomes 81 air pockets surrounded by tender, shattering pastry.
Three things have to be true for this to work. The fat has to stay solid and pliable through the folding. The gluten has to be strong enough to contain the steam without tearing. And the flour has to absorb water cleanly without becoming sticky or slack.
Why most pastry flours fail at lamination
American pastry flours are typically low-protein soft wheat blends designed for tender cookies and cakes. They are bad at lamination because their gluten is too weak to hold the layers under the pressure of repeated rolling. American bread flour is the opposite problem. Too strong, too elastic, fights the rolling pin, contracts when you try to shape.
What you need is a flour engineered for the in-between. Strong enough to hold the layers. Extensible enough to roll without springback. Le Sinfonie Croissant flour sits at exactly this intersection. It is what we call "soft and sturdy," and it is the only descriptor we have ever needed for it.

The four temperatures that govern lamination
- Butter temperature: 58–62°F. Soft enough to roll, firm enough to stay sheeted. Below 55°F it cracks; above 65°F it absorbs into the dough.
- Détrempe temperature: 38–42°F. Cold enough to slow gluten development, warm enough to roll without snapping back.
- Room temperature: under 70°F is non-negotiable. Above 70°F you are fighting the butter every minute.
- Proof temperature: 78–82°F. The window where yeast is active but butter stays solid.
The lamination sequence we teach
This is a single-turn-heavy schedule developed with our pastry team in Curtarolo. It produces a more open, honeycombed crumb than the classic three-book sequence.
- Day 1, evening: Mix détrempe. Bulk ferment 1 hour, then refrigerate overnight.
- Day 2, morning: Lock in butter block. Single turn. Rest 45 minutes refrigerated.
- Day 2, mid-morning: Second single turn. Rest 45 minutes.
- Day 2, late morning: Third single turn. Rest 60 minutes.
- Day 2, midday: Roll out to 4mm. Cut. Shape. Proof 2.5 hours at 78°F. Egg wash. Bake at 410°F for 16–18 minutes.
Reading a properly laminated dough
Cut the proofed croissant in half before baking. You should see distinct, visible layers, alternating dough and butter, holding their structure cleanly. If the layers have blurred together, your butter got too warm. If the dough is gray and the layers are torn, you over-worked the gluten.
After baking, the test is the honeycomb. Pull the croissant apart with your hands. You should see open, irregular air pockets, the largest near the center, smaller toward the edges. The crust should shatter, not crumble.
